Meal idea: Classic Staffordshire Beef Burger with Smoked Bacon & Mature Cheddar Season the patties with sea salt and cracked black pepper just before cooking. Grill or griddle on a high heat for 3–4 minutes each side for a pink, juicy centre. In the last minute, lay a slice of mature Cheddar on top and let it melt. Toast a brioche bun, spread the base with a generous dollop of burger sauce (mayo, ketchup, a dash of Worcestershire sauce), then layer with crisp smoked bacon, the burger, sliced gherkins, and shredded iceberg.
