Two great steaks in one. The T-bone gives you the best of both worlds — a generous strip loin on one side of the bone and a tender fillet on the other, all cooked together for maximum flavour. The bone keeps the meat juicy and adds depth as it cooks.

Hand-cut by our butchers to order, from native-breed British beef matured for flavour and tenderness. A proper showpiece steak, thick-cut and ready for the pan or grill.

**How to cook:** Bring to room temperature, pat dry, and season generously. Sear in a very hot pan or on the grill for 4–5 minutes each side for medium-rare, rendering the fat edge against the side of the pan. The fillet side cooks faster than the strip loin, so angle the pan or shift the steak to protect it. Finish with a knob of butter, thyme, and a crushed garlic clove. Rest for at least 5 minutes before slicing either side away from the bone and serving.
