Let it go low and slow in a hearty stew with root vegetables — carrots, parsnips, swede, and a rich stock that fills the kitchen with something wonderful. How to Cook
Slow-Cooked Lamb Stew: Brown the diced lamb in batches in a hot pan with a little oil. Set aside and gently fry onion, garlic, and your choice of root vegetables — carrots, parsnips, and swede work beautifully. Return the lamb to the pan, add lamb or vegetable stock, a sprig of rosemary, and season well. Cover and cook on a low heat for 1.5–2 hours until the lamb is tender and falling apart. Serve with crusty bread or creamy mash.
Lamb Skewers: Mix together olive oil, garlic, cumin, coriander, smoked paprika, fresh mint, and a squeeze of lemon. Toss the diced lamb in the marinade and leave for at least 1 hour (or overnight for best results). Thread onto skewers and grill or barbecue over medium-high heat for 12–15 minutes, turning regularly, until cooked through and lightly charred. Serve with flatbreads, a fresh salad, and yoghurt dip.
