There are few things more rewarding than a slow-roasted lamb shoulder pulled straight from the oven. Our bone-in shoulder joints come from Staffordshire-reared lambs, raised on lush pasture and finished to the highest welfare standards. The bone adds depth of flavour as it cooks, yielding meat that's tender, richly marbled, and effortlessly falls apart.

Meal idea: Slow-Roasted Lamb Shoulder with Garlic & Rosemary Score the skin and push in slivers of garlic and fresh rosemary sprigs. Rub generously with olive oil, sea salt, and cracked black pepper. Place on a bed of roughly chopped onion and carrot, add a splash of red wine or stock, then cover tightly with foil. Roast at 160°C for 4–4.5 hours until the meat pulls away from the bone with ease. Rest for 20 minutes before serving — perfect alongside roasted root vegetables and a rich lamb jus.
