The butcher's secret. Flat iron is cut from the shoulder and, pound for pound, is the second most tender cut on the whole animal, beaten only by fillet. The difference? It costs a fraction of the price and has a far richer, beefier flavour.
Hand-cut by our butchers to order, from native-breed British beef matured for flavour and tenderness. A generous 16oz cut, ideal for sharing between 2–3 people — slice against the grain and serve.

**How to cook:** Bring to room temperature, pat dry, and season generously. Cook hot and fast — sear in a very hot pan or on the grill for 3–4 minutes each side for medium-rare. Rest for at least 5 minutes, then slice thinly against the grain. Perfect for sharing, steak sandwiches, or piling onto a salad.
