How to cook
Remove from the fridge an hour before cooking. Season generously with salt, pepper, and your choice of herbs. Roast covered at 160°C for 3–4 hours (1kg) or 5–6 hours (2kg), removing the lid for the final 30 minutes to crisp up. The meat is ready when it pulls apart easily. Rest for 15 minutes before serving.
